I appreciated David H. Lyman’s article on Caribbean rum (caribbeancompass.com/my-love-affair-with-caribbean-rum), as the various islands serve up some mighty fine rums. From the distinctive agricole rums of the French islands to “extra strong” white lightning and 150 proof fuel rums, there is no end to the mix and match possibilities. I only add my favorite mix: the “old fashioned” rum punch. It is very much like a t-punch but drinkable! It consists of your favorite mixing gold rum — ours is Fernandes Black Label from Trinidad — lime juice, cane syrup, ice, and a splash of Angostura bitters. Try it with different rums at your next sundowners gathering, waiting for the Green Flash.
